I'm starting on the demo right now, doing the initial draft. My question is, do younger players increase from their starting point, and assuming they do, what age does the improvement end? I'm assuming there is a variable range and that the same applies to the beginning of player decline in ability, yes? Thanks in advance for any feedback.

players will improve continously over their career. A range of factors determine the rate of improvement (and eventual decline). Training runs every week (in addition to training camp) and you get an email indicating who progressed. In the "ratings progression" tab on the player card you can see the progress made since the beginning of last season.
