Just off the top of my head.

Play Action passes.
More formations on DEF/OFF.
Ability to have the CPU offer you trades.
More user-friendly training menus (ability to remove/add player(s))
Better AI logic in certain game situations (few times had my coaches call runs in obvious pass situations that ruined games for me), as well as when you have the AI set your depth chart.

In terms of money/contracts/finances/stadiums.
- Would like to control the ticket prices, vendors etc.
- bonuses, incentives.
- yearly breakdowns of a player's earnings.
- ability to make back-loaded, front-loaded, even contracts.
