is there a way to use the offensive coach's strategy and create my own defensive strategy or vice versa rather than use coaches or not use coaches?

Yes, you can have coaches control both, neither or either one you want.

That does not work for me. I can either have the coaches control both or none. It won't let me choose to allow a coach for one and my personal strategy for the other.
