There are tons of blitz plays, if your not sure look at the play art by going to playbooks, viewing the playbook you are using and clicking on the play. The play art icon for blitz is a downward facing arrow, just like rush.
As far as what is better against run vs pass, in this game defensive players go through a process based on their attributes to identify play type and respond accordingly. if a play is a run they will abandon their blitz and go into run pursuit. That said any blitz (excluding a CB blitz) will move the initial position of the player closer to the line of scrimmage which can help. essentially what happens is the Safety or LB will line up straight down from their base position closer to the line of scrimmage. CB blitzers dont move from their base position currently, but do get penetration from the edge.
any blitz but especially an LB or Safety blitz because of how close they are to the QB is very effective at pressuring the QB.
