Question about Transfers

Do the transfer players count against the 85 man roster limit for the season they have to sit out ? I am trying to find out if I have to release a player if a transfer player agrees to play on my team, which would actually leave the team with one less available player for the current season.

85 is the max... if you are already at 85 then transfers shouldn't choose your school

A transfer I recruited signed with my team. He is currently listed as a soph. After sitting out this season, will he still be listed as a soph again next season when he is eligible to play? Or do i need to redshirt him to keep him as a soph again next season even though he is not eligible to play now anyway ?

No, they lose a season so he'd be a junior. Up to you whether you redshirt him.
