Although you might not be able to edit the owner within the game, using a free database editor like SQLite, you could edit the default database and change owner information.
That would sort of defeat the purpose of challenge mode because you would be able to edit yourself into more job security. As slybelle said you could edit the original database and not randomize ownership characteristics when creating a new game or you could play in sandbox mode where it doesn't really matter what the owner wants because you cannot be fired
