I didn't fire my assistants to start my save. And just passed over that phase of hiring. I had a successful recruiting process (only had 1 to give, but as Bucknell I landed a B- level PF. I already had my practice plan set. as practiced started, I went to my Staff page and all my assistant coaches are gone.

This is my second save, because I had the same thing happen the first time. Now I have to start over as the game won't let me hire new coaches now even though I still have over $50,000 left. What am I missing?

Give me some dates. Start up on May 1? If so, coaches should be in place. Date when they disappeared, or when you noticed they disappeared? This is very likely a bug and you'll need to send the files to Support but just in case, tell me those dates. Coaches can leave at about 4/16 but shouldn't leave before then, and you'd get an email notification if any did leave.

Started up May 1. Kept them as they were still on a 4 year contract. Didn't look at them again until October which is when I discovered it. I tried to submit a ticket, but when I attached the save, it said it was too big of a file.

WTF???? They just showed back up like they were just out drinking at the bar!

Sounds like your coaches have a low discipline rating!

That's usually where I disappear to!

I have seen assistant coaches vanish from the staff screen during the pre-season practice session. I would check out the coach assignment tab, the coaches should be visible there.
