Just curious, can you create new school(s) to a custom league? If so, how?

There is not a way in-game to add a single team. You can realign conferences in between seasons, but it works with the league format you started with.

If you want to customize the number of teams you'll have to delve into the modding world. viewforum.php?f=268

The real world mod is a great example, and there are some smaller and larger mods for customized leagues you can use as templates.
