OK the first three are offensive styles - when you change them in the strategy screen you will see how they impact the style of play your team will use.
2 for 1 is an in game strategy that will instruct your team to hurry up in the final seconds so that they get a shot off before say the 30 second mark so that the other team will not be able to get the last possession and you will get two possessions at the end. Last Shot is also in game strategy telling your team to go slow and hold for the last shot of the quarter.
The defensive strategies you listed are all different styles of man to man defense. Straight is just your typical man to man. Switch will have a heavy amount of switching players to defend when there are screens. Attack will be an aggressive form of man to man which could increase steals but increase fouls and passive would be the opposite telling defenders to sag off
