Sounds like you want number 3 or 4 depending on if you want no stats or historical stats when you start and yes you only choose one. There will be players but they will all be fictional. No one makes real rosters although a few people have tried its just too many player and then 1/4 of them leave at the end of the season so its not sustainable. Sounds like it your first time using the Mod I suggest reading the instructions!
The first one you choose has no coaches and isn't the full mod as its the Default Wolverine Studios file with just Team name and logos changed.
